Reviewed Mexican Corn Soup

Jun 30, 2012 in Food Network Community Toolbox on FoodNetwork.com

Regretting not using the cheese and bacon...could have added a lot more flavor. I did add 1 poblano pepper and 1 jalapeno pepper which made it medium spicy, but still lacked some major flavors."

Reviewed Gina's Hot and Spicy Tortilla Soup

May 14, 2012 in Food Network Community Toolbox on FoodNetwork.com

Very good! In addition to the above ingredients, I added 1/2 tsp Mexican spices (as I only had regular diced tomatoes, not "Mexican-style"), 2 cloves of minced garlic, and 1 diced Serrano pepper. It had just the right amount of medium spiciness. It tasted so fresh! "

Reviewed Spaghetti Bolognese

Apr 11, 2012 in Food Network Community Toolbox on FoodNetwork.com

Holy cinnamon and nutmeg! I'm glad I halved those, and will further reduce them next time! I also substituted beef and pork for ground turkey and eliminated the cream at the end. Other than those changes, I followed the recipe and it turned out pretty well! Just a few more tweaks with the spices and it will be perfect!""

Reviewed Killer Hazelnut Brownie Bites

Dec 3, 2011 in Food Network Community Toolbox on FoodNetwork.com

Yum! Delicious brownies...loved the crunch of the chopped hazelnuts on top (skipped the frosting). Forgot to add the vanilla bean, but used turbinado sugar with vanilla flavor and that worked out great.""

Reviewed Grilled Shrimp Marinated in Paprika, Garlic and Thyme with White Wine Sauce

Aug 20, 2011 in Food Network Community Toolbox on FoodNetwork.com

Ok. Marinade burned with the high heat, so finished the shrimp by sauteing with some of the sauce and it took away the burnt flavors. I tossed the shrimp with some pasta and the sauce, but really not sure how the flavors of the marinaded shrimp and sauce work together.""

Reviewed Sour Cream Coffee Cake

Jul 20, 2011 in Food Network Community Toolbox on FoodNetwork.com

Very very good! I followed the cake recipe exactly and then I doubled the entire streusel recipe and had enough for a nice middle layer as the others suggested. I baked for 55 minutes and the edges were a bit dry, so next time I will take out a few minutes early. I also tried baking in muffin tins and 2 dozen muffins were done in 30 minutes and"

Reviewed Farro Salad with Tomatoes and Herbs

Jul 15, 2011 in Food Network Community Toolbox on FoodNetwork.com

So delicious! It was my first time making farro and it was so easy. Think I will add more parsley, pieces of cucumbers and chopped cherry tomatoes next time (as an alternative to tabouleh)."

Reviewed Shrimp with Roasted Garlic Pesto Pasta

Jun 26, 2011 in Food Network Community Toolbox on FoodNetwork.com

Good. The pesto was definitely missing something...maybe I'll add the chili flakes next time and more garlic and leave out some of the oil at the end. The garlic only needed 30 minutes in the oven as others pointed out."

Reviewed Chocolate Chip Oatmeal Cookies

Jun 24, 2011 in Food Network Community Toolbox on FoodNetwork.com

Very good! I followed the recipe, except... left out the pecans and cooked them for about 13 minutes instead of the recommended 9 (since I made them larger than walnut-sized. The amount of sweetness was perfect...glad I added milk chocolate chips instead of semi-sweet!"

Reviewed Red Snapper en Papillote

Jun 24, 2011 in Food Network Community Toolbox on FoodNetwork.com

Good recipe. I used two rock cod fillets, quinoa, and potatoes with the rest of the ingredients that are mentioned in the recipe. Probably needed to add more herbs, garlic, salt, and pepper as it seemed a tad too bland. Have never cooked fish with parchment paper before, so will definitely try it again!"

Reviewed Strawberry Shortcake

Apr 12, 2011 in Food Network Community Toolbox on FoodNetwork.com

Amazing! The shortcake was soft, biscuit-like and not very sweet, so it went perfectly with the fresh whipped cream and berries. I mixed in blueberries with the strawberries and only added 2 tablespoons of sugar to the berries and they had the perfect amount of sweetness (after sitting in the fridge for about 45 minutes). Other then that, I followed...

Reviewed Chicken Enchiladas

Mar 19, 2011 in Food Network Community Toolbox on FoodNetwork.com

Very good! I save time by buying a rotisserie chicken and mix the shredded pieces with the spices before adding to the onion/corn/chile mixture. I've used both canned and fresh chiles and both ways taste great. I definately use a lot more cheese and sauce than is called for in the recipe as I don't like my enchiladas dry. If you are looking for...

Reviewed Honey Soy Grilled Salmon with Edamame

Feb 24, 2011 in Food Network Community Toolbox on FoodNetwork.com

Delicious! I followed the recipe exactly. The basting sauce does burn in the broiler so definitely need to use foil over the baking sheet. As a side dish, I tossed soba noodles with the edamame and mixed in a lemon-ginger dressing, which was also great! Yum, can't wait to make it again!"
