I don't think Alton would approve but, as I just plain hate eggs, I have found that substituting 1 T cream cheese for each egg works to help bind things without eggs and it just adds to the creaminess. I hope that perhaps that allows you to make the recipe, and that it works for you and your daughter!

This soup was very good. The only thing I did differently was I blended the chives after I blended the leeks and potatoes. I tasted it before and thought it needed the punch.
