I didn't use the avocado or the nuts.. But the vinaigrette in this recipe is divine! It worked so well when I roasted the beets in the oven - put them in tin-foil with the vinaigrette dripped over it and baked them for an hour. Then I just used the rest for the dressing. Worked out perfectly! ""

This recipe was great but I modified it to my liking. I pan seared the chicken but just put the whole lot (apples, onions, Chicken & sauce) into a corning wear dish and baked it. Very easy to make! Had everything except the capers - which I love, so next time I will make it with capers. I think I will also add more garlic and olives as the tuna really does take over the taste of the dish. I used tuna in water as I had no tuna in oil - and I use a fair amount of oil in the dish. ""
