Reviewed Roasted Tomato Soup
"Indescribably delicious, unbelievably simple, and wonderfully versatile. I've made this several times now, and even my "meat and potatoes" 6th grader absolutely loves it, as we all do! Over the summer, I used my own garden fresh cherry, roma and campari tomatoes and used recommended 3/4 cup of cream. I just made a batch this morning, and looking at the recommendation of another reviewer, I used only about 2 tablespoons of cream (needed something to take the bite out of the tomatoes), and honestly, the taste didn't suffer one bit. I use my immersion blender then I run it through a double mesh-strainer and I tell you, this soup could be served in a 5 star restaurant. It's a very elegant start to any special dinner at home, or you can use it elevate ordinary pairings (awesome served with grilled cheese sandwiches on sourdough)and (if there's any left!) my kids love to take it to school in their lunches the next day. Do yourself 2 favors: make this soup and make it a double batch!
