"Just made these and I'm in heaven. Recipe produced a surprisingly light "cake like" cookie that is chocolatey minty goodness! I decided to make the cookies smaller and used a 1.5 inch scoop which yielded 28 cookies. I also used 1/2 of a 10 oz. bag of Andes creme de menthe baking chips. I baked @ 325 on convection. Reviewed Hot Wings with Blue Cheese-Yogurt Sauce
"I made these for a New Year's party last night (3x wings, 2x dressing and 4x sauce) and the guests loved them! My husband liked them too but was disappointed in the lack of heat.
Couldn't find ancho chili powder so I used 2 fresh ancho's. Charred them and then pureed them w/the chipotle's. I also used garlic wine vinegar. Based on other reviews, I chose to use less vinegar (1 1/2 cups and the sauce was still overpowered by vinegar. Added about 1/2 c. brown sugar to help tone it down. I used only 1 stick of butter. I baked the wings on racks at 375 for about 35 min. I seasoned them with a different rub prior to baking.
The only reason I'm rating this 3 stars is because of the lack of heat and the overpowering vinegar taste of the sauce.
If you're looking for a recipe that has a dominant southwestern flavor, not much heat and a vinegar based sauce, I highly recommend giving this one a try. The search for the mexican ingredients is well worth the effort. Happy New Year!!! :-
