"First experience with Kale... and I really liked this. I'm going to try washing the kale in hot water to try and soften it up a little next time."

Reviewed Pork Chops with Potatoes

"I am not sure what I was expecting, but I loved this. My chops were not as thick as I wanted and I was not able to put as much garlic inside. I also substituted a few dashes of gin for the juniper berries. I have only been cooking a few years and I am just floored when something comes out this good. This will be one of my "Go To's""

Reviewed Mesa Grill's Spicy Bloody Mary

"YES! This will wake up the party. For the jalapenos I used a few slices from a jar."

Reviewed Baked Eggs with Farmhouse Cheddar and Potatoes

"Very simple... and outstanding. I have tried something similar by another Food Network chef with southwest spicing and the ingredients just got in the way. This recipe does not mess with a good thing. Loved it."

Reviewed Light Chicken Enchiladas

"These were really tasty and I'll be adding this recipe to my "go to" list. There was no heat at all, though, so I'll be adjusting that to my taste next time... maybe leaving some of the Jalapeno seeding or finding something else to zest it up. I made half with corn tortillas and half with flour... didn't matter to me, they both rocked."

About Me

I decided three years ago, at just past 50, to learn to cook.  I can't believe what I've missed out on!

Favorite Foods

I don't "Mexicanize" everything... but it takes willpower.  Some of my more successful dishes:  Chicken Enchiladas Suiza, Spinach & Tomato Lasagna, Spaghetti with Cilantro Sauce, Baja Fish Fried Tacos...and I love good Brussels Sprouts sides.
