Sweet, subtle, tasty. 30 minute prep time is off. I think there needs to be a little less flour to make it a little more juicy. I used the pre-made pie crusts and did them in individual ramikens. This was a great recipe. The cake turned out well, simple to follow. Used all purpose flour and added baking powder and salt. The lemon curd filling was excellent. But I substituted the icing with a cream cheese with lemon frosting from her Hummingbird cake recipe. Absolutely amazing. I got nothing but compliments on it. Thanks again Paula, You "

Super simple recipe. Very good flavor. Despite using only half of the "Essence" on the shrimp, was still super spicy and I love spicy. Like others, used canned, diced tomatoes in place of fresh. Definitely a keeper. Have a feeling, it's gonna be even better tomorrow."
