Reviewed lemon curd

The is a great recipe, sweet and tart. I added the zest of 4 lemons to the sugar and mixed with my fingertips to release the oils. I then followed the directions as stated. Once the mixture cooked, I pushed it through a sieve and added pectin (for cake filling). The result was smooth and delightful.

Amazing recipe and so simple. Ina's recipes are quickly becoming a part of my collection. I did not cook my pork long enough and I found that 3lbs is too much for two; so be sure to check it with the thermometer and have plans for the leftovers. Enjoy"
