Reviewed Almond Chicken Salad

"I make a modified version of this recipe as I don't make a large batch. I dice 1 can of chicken or 1 piece of chicken where the white meat is and place in a bowl. I add 2 dollops of mayo and juice of about half a lemon. I sprinkle with salt twice like you would a piece of meat so that it's not too salty. After mixing it together is it needs more mayo to bind or lemon to taste, I'll add a bit more. I use 2 stalks of finely chopped celery as I don't like chicken salads that have everything in them but the kitchen sink. I hadn't added slivered almonds before tried it and it adds a nice crunch.

"My chicken salad is similar to this but modified as I don't make large batches. I use 1 can of chicken or 1 chicken breast diced. I put the diced chicken in a bowl, add 2 dollops of mayo and the juice of about half a lemon, and sprinkle it twice with salt. By sprinkling with salt like you would a piece of meat, it's not too salty. I mix that all together. If it needs more mayo to bind, I'll add more then taste. If I want it more lemony, I'll add a bit more lemon. I don't like chicken salads that have everything but the kitchen sink in them so I just use finely chopped celery, about 2 stalks. I hadn't added sliced almonds before but did and it gives the salad a nice crunch.

Reviewed Short Ribs

"This is a simple tasty recipe. However, if you don't want to have 1 1/2 cups of Paula's House Seasoning in your cupboard, just make enough for this recipe. 1 tablespoon of salt, 3/4 teaspoon of garlic salt and 3/4 teaspoon of black pepper mixed together are more than enough to season 3 pounds of short ribs. Since proportions for the additional salt & pepper aren't given, when adding the onions and additional garlic to the casserole dish, I didn't add more salt & pepper. I'd rather have people add it on their plates than present an over salted and peppered dish.
