Reviewed Slow Cooker Red Beans and Rice

"May be just a personal taste preference but, I think the recommendation to pre-soak the beans is misguided. I used small red beans straight from the bag. Added a bay leaf, some celery and green pepper along with the other stated recipe ingredients. Then, cooked on high in a slow-cooker for about 5 hours. Needed to add a bit more water about 3 h""

Reviewed Neely's Zucchini Gratin

"Great and versatile recipe--you can certainly substitute other veggies or cheeses. For those reviewers that thought this was too watery--lightly salt the veggies and let them sit in a colander to draw-out some of the moisture while the onions are cooking. This is a delicious basic recipe with less fat than most vegetable gratin recipes I've read. ""

Reviewed Mexican Squash with Yogurt Dip

"Using greek yogurt, made this sauce exactly as the recipe instructed. Then, didn't get a chance to cook the cayote squash until a few days later. The sauce kept very well in the fridge without separating or getting watery. This is a tasty way to put some bulk in your meal for not a lot of calories. Will probably add a little garlic and/or cila""

Reviewed Roast Pork and Potatoes

"This is a really tasty as well as economical dish. I substituted 2 thick hunks of boneless pork sirlion chops totaling just under 2 lbs. I halved the onion mixture ingredients, added basil, and used 1.5 lbs of baby potatoes. Yum! Everything fit perfectly in my 8X8 baking dish. The pork was juicy and flavorful and the potatoes were to die for. I d"

Reviewed Apple-Cheddar-Squash Soup

"Tasty soup but the instructions could be better. Seems odd to add the milk before pureeing and then simmer for 10 minutes... I left the milk out but would add it after pureeing, if using. Same with the cheese. Also, I used 1 1/2 lbs cubed squash that I pre-cooked in the microwave for 6 min., and then added to the pot after sweating the other veggies. Made the assembly easier, in my opinion. Unless the squash is diced very small, it seems like it would take it much longer to cook than the other veggies, if added to the pot raw.
Try adding 1-2 tsp curry powder for an extra flavor kick. YUM! "
