I made these for Easter and they were a home run! One of my guests told me he doesn't normally like scalloped potatoes, but thought these were delicious. Is anyone else using the cupcake recipe in a high altitude? The first batch completely overflowed into a giant pancake on top of the pan, so the next batch I only filled 1/2 full. These are even starting to run over the top of the baking tin. Tasty, but I wish I had used a store-bought mix. Epic fail..."
