I've been working my way through the Madeleine recipes on here, so thought I'd try this too. I must admit that when I saw, in the ingredient list....egg whites, water and yellow cake mix, I felt that these would probably be terrible. I tried these and the texture was better than a lot of the other recipes here....but don't use your electric mixer to mix in the dry ingredients, it will make for a tough Madeleine. Just fold it in, making sure it is all incorporated and that there are no bits of dry in the mix.

The brown sugar is also superfluous, as you are already...

I agree with goodcook in VA, in that these taste good...but they are not Madeleines. I am in Europe on a regular basis, and spend a lot of the time in Paris.
