Reviewed 4 cheese stuffed shells

Sep 21, 2014 on FoodNetwork.com

First of all, the proportions are TOTALLY off. RR calls for eight jumbo shells; I used half of a brand-name package which ended up being 24 jumbo shells, which was the perfect amount. It ended up being enough to make two meals for a family of three. I would also be careful to look at the package directions for the pasta before cooking it-- this recipe...

Replied to quinoa and salmon croquettes

Jun 18, 2014 on FoodNetwork.com

I thought it needed sauce too, so I made a (still healthy!) lemon-yogurt sauce: 1/2 cup nonfat greek yogurt, zest and juice of a lemon, and the rest of the scallions I had left over from making the patties, plus salt and pepper to taste. We really liked it, so it could be worth trying!

Solid recipe! I added 2 tablespoons of breadcrumbs because it was looking a little wet, and let the patties rest in the fridge for an hour before cooking, but they held together and the flavors were delicious! I thought it needed a sauce, though, so I made a lemon-yogurt sauce with 1/2 cup nonfat greek yogurt, zest and juice of a lemon, and the rest...

This recipe is ridiculously amazing. Normally I am a mac'n'cheese purist, but even I have to admit it-- this recipe is better than ordinary mac'n'cheese. It has become our new go-to! My only modification is to up the amount of cheddar I use, and use crushed butter crackers rather than croutons.

This is AMAZING! I wasn't expecting to like it, but I was looking for vegan recipes to serve at an upcoming party, and this looked simple and quick. I decided to try it out first to make sure it was okay, and fell in LOVE! My only note is that a full recipe (even with the chicken) wasn't quite enough for a meal for two people. LOVED this! Super simple but really delicious, this will definitely become a new go-to. Reviewed Coconut Flan

Mar 1, 2013 in Food Network Community Toolbox on FoodNetwork.com

This is unbelievably delicious and really easy! My only comments would be that 1) it's really hard to coat a pan with caramel after having sprayed the pan with nonstick spray, and 2) this is MUCH sweeter than your average flan, and I do wish it were a teensy bit less sweet. Even with those criticisms, though, it is still incredibly delicious. DEFI"

Feb 28, 2013 in Food Network Community Toolbox on FoodNetwork.com

This was definitely easy, and the results are absolutely DELICIOUS! However I agree with a few other reviewers-- this isn't a true caramel, but more of a sweet brown sugar sauce. Still good, though :) "

This was EXCELLENT. Usually I am not a huge fan of split pea soup, but I absolutely loved this! It had a great fulness of flavor, and didn't taste like it was "missing" anything. The only modification I made was to use a pork shank rather than a ham hock, because that's what I had on hand. I highly recommend it! "

I was really frustrated that the proportions for this were so wrong, and the mini muffin tins didn't really work at all. My husband and I absolutely LOVED this! The balance of flavors were spot on, and went fantastically with both the pork and the garlic mashed potatoes we made with it.

The flavors were for the most part good, but it was desperately in need of a little spice. Next time I'd add some red pepper flakes to give it a little something more.
