Reviewed banana nut muffins

LOVED these muffins. Didn't have any eggs in the house, so added 1 tbsp. flax seed meal and 3 tbsp. water in with the bananas and brown sugar (to provide a little 'body'. Baked at 350 for exactly 19 minutes. Fluffy, tender crumb, and a slightly crisp, caramel crust. Gorgeous!

If you can help it, don't substitute the pecans for walnuts....

A cup and a half of olive oil?! Are you kidding me? That has GOT to be a typo. And a WHOLE HEAD of garlic?! Come on. That's like, 8 or 9 cloves of garlic total. For 1 1/2 lbs of shrimp? What a waste of shrimp and chorizo. P.S. - You'd want to use smoked Spanish paprika in a dish like this (minus all the oil and garlic), not Hungarian. Good Lord, who...

There are several things wrong with this recipe. 1) Temperature and baking time should be 400 degrees for 30-35 minutes; 2) Way too much salt - only a pinch is required in the apples, not 1/4 tsp.; and 3) my opinion - not enough dough for the amount of apples; would increase to 1 1/2 c flour and 10 tbsp. butter.
