"Just a quick note...I agree with the fresh salsa being the way to go and I added a whole jalapeno diced real small. By the way, dj_trix_12667134 you mentioned the rind of the lime was bitter...you didn't actually eat it did you? Whooa!

Reviewed Baked Costa Rican-Style Tilapia with Pineapples, Black Beans and Rice

"Let me just say upfront...this is a very good recipe. Not sure what some people are expecting when it comes to adding flavor to tilapia? Its a mild white fish...nuff said. Its not like salmon or tuna where you can just put a little olive oil, salt and pepper and voila great flavor. Tilapia is the vehicle for delivering flavor not providing it and it does its job just fine with this recipe as would any other mild white fish. Give this one a try its a keeper!
