About Me
I am a retired law enforcement office who loves to cook. I have been taking an on-line cooking course at http://www.rouxbe.com. I do however get most of my recipies here on the Foodnetwork. I am also a certified Barbeque Judge with the Memphis Barbeque Network. Italian food is my weakness. I love to cook it and eat it also.
Of course I cook a lot of food on my Big Green Egg. I cook everything from meats, pizza, breads, biscuits and jerky on the BGE. I cannot understand why Food Network has not had a show on BGE cooking. The BGE has almost what could be called a cult following.
I try to use recipes that use.ingredients that I can actually find. I run across so many recipes that call for items that can only be found in places like New York and LA. Here in the Atlanta area we have an amazing amount of resources to buy ingredients. I still find recipes that have ingredients that simply cannot be found here. Why publish recipes if the average cook cannot find the things needed.
Favorite Foods
Italian food is my favorite to both eat and prepare. Most of them are simple to prep, cook and serve. For many years I was somewhat intimidated by Italian cooking. After watching Giada all that changed.
I guess if I am famous for anything it would have to be my smoked Prime Rib. I cook it on my ceramic cooker for about 4 hours with a very simple rub.
My favorite restaurant would have to be Papadeaux's Seafood Restaurant. Their crawfish dishes are outstanding. The dessert cart is over the top especially their Sweet Potato Pecan Pie is THE dessert to get.
