"I was very nervous about making turkey for the very first time last Thanksgiving. It was traditional in my family to make duck instead if turkey and I had nightmares remembering those unfortunate times when my dad made a go at making turkey. Thankfully, watching Ina use this recipe gave me the confidence that I could do it and I did! This was the most delicious, moist, savory, and mouth watering turkey I have ever tasted. I was ordered by my family to put the duck away and always make the same turkey every year. Thanks Ina, you are the best!!!! BTW, I did use a brining recipe that I believe was either from Alton or Emeril.
