Reviewed Plantain Soup

Just came back from Mexico where I had plantains almost everyday. I wanted to continue my Latin cuisine. This soup tastes better the second day, so I would suggest making a day before consumption. It was definitely thicker than what it appears on the picture so use maybe 5 1/2 cups, maybe even 6 cups of broth if you are going for more of a soup"
