I made this as a stand-alone appetizer, not a salad. I couldn't find the pear jam so I used a can (yes, can) of pears. Not the ones in heavy syrup. Very good. The Cilantro pesto makes the dish! And, do follow the other reviewers comment about the cheese. It should be queso fresco, not blanco.

Very refreshing. Following other reviewers suggestion, I added the milk until I got the consistency I wanted. I used chipotle sauce from the can rather than the cayenne. It gave it a deeper flavor. Such a hit for Thanksgiving! The dish is a bit "summery" but thought it might be a nice addition to the many heavy, starchy traditional Thanksgiving fare. Followed the recipe except cut down on the champagne vinegar to only 2 T in the final mix.
