Reviewed Tilapia Fish Tacos with Arugula

May 1, 2011 in Food Network Community Toolbox on FoodNetwork.com

These were a lot of work, but a very creative 'fusion' recipe to make at home. I couldn't find creme fraiche at the grocery store, so I mixed a little sour cream and greek yogurt with wasabi paste. It turned out alright as a topping, but I think the mango-avocado salad made this dish. (Too bad I picked a lousy mango!)"

Reviewed Peppermint Bark

Delicious and super-easy! This is kind of a non-recipe, but.. why not? I love it with semi-sweet chocolate too."

Reviewed Broccoli and Cheese Smashed Potatoes

Apr 17, 2011 in Food Network Community Toolbox on FoodNetwork.com

I liked the basic idea of mixing mashed potatoes with broccoli, but I found that this had too much milk and was somewhat flavorless. I added smoked gouda, a few tsp. of garlic powder, and a little more butter and strained the potatoes to remove some of the milk. "

Reviewed Chicken Empanadas

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

These are by no means authentic empanadas, but they're very yummy. My filling tends to sink to the bottom a bit. I've also made these without the chicken (just the cream cheese & pepper stuffing) and it comes out yummy!"

Reviewed Grilled Honey Glazed Chicken with Green Pea and Mint Sauce

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

My hubby and I made this for an anniversary getaway - we had a grill and some tongs, so I went ahead and marinated the chicken ahead of time, put the pea-mint sauce in a tupperware, and then we just grilled it up! This would be fun for a beach bbq away from home. I loved the flavors in the chicken and I thought it'd be fine on its own, but my hubby...

This coco shrimp is delectable! The dipping sauce is a must. (I sub apricot jam, because that's what I usually have on-hand.)"

Reviewed Stuffed Chicken Divan with a Sherry Dijon Sauce

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

Although this recipe is much healthier than your traditional chicken divan, it's even more delicious! I love the idea of stuffing chicken by creating a pocket (rather than flattening & rolling the stuffing into the chicken). The evaporated milk also added creamy texture without adding fat!"

Reviewed Pat's Roast Beef

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

Every time I visit my family in the DC 'burbs, my mom picks up a big roast for me that she finds on sale at a local supermarket. I freeze it, bring it home, defrost it over a few days, and then cook it with this recipe. It always comes out amazingly delicious. Depending on the size of the roast, it the cooking time will vary, but 130 degrees will...

Reviewed Spicy Cherry Ribs

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

Finger-lickin' good! I love sweet & spicy flavors combined. It's a little involved, but they're worth it!"

Reviewed Das Pear Pineapple Strudel

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is a great intro into making fruit-filled pastries at home. I thought there was a little too much fruit for the amount of pastry involved and it came out a little greasy, but it was very yummy and sweet, and the top turned out crisp."

Reviewed Grapefruit Cake with Grapefruit Cream Cheese Frosting

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

I made this for my hubby's birthday several years ago. I'm not a huge grapefruit fan, but I thought this was surprisingly delicious! The cake didn't rise too high, but it tasted great. (... I still haven't used the cream of tartar since...)"

Reviewed Fruity Irish Soda Bread

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

I've made this twice, and each time I've played around with different dried fruits. I always add raisins, but I'd also used figs, cranberries, and apricots. I love this recipe - it comes out very moist and I didn't find it tough to work with the dough."

Reviewed Spiced Turkey Breast

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

We use this rub for our turkey year after year - instead of using it for just a turkey breast, we use it for the entire turkey. The seasonings crisp up the skin while seeping into the turkey and keeping it flavorful!"

Reviewed Best Ever Green Bean Casserole

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

A lot more work than the 'cream-of-whatever' green bean casseroles and frankly not nearly as good. I'm sure it's a lot better for you, but it's Thanksgiving, and I don't really care if it's good for me. ;)"

Reviewed Frittata

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was my first foray into frittata-making and it continues to be a simple, yummy go-to recipe. I omit the ham and tend to wing it with some herbs. It's a great staple recipe that can be changed with different veggies, meats, and herbs."

Reviewed Smoky Beer Burgers with Creamy Mustard Sauce

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

This is my hubby's favorite recipe.... get this.... OF ALL TIME. He asks for these burgers constantly, but I can only take so much smoked gouda - it's so intense! These are very yummy. I'd reduce the amount of beer since they get a little liquidy, but other than that, I keep everything the same. The small chunks of gouda makes the burger so moist...

Reviewed Grilled Tilapia with Peach BBQ Sauce

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

I also halved the recipe, and still had too much BBQ sauce. I agree that it's a little too vinegary, but I think you can take the idea of using peaches in BBQ sauce and alter the rest to taste!"

Reviewed Shrimp and Oyster Po' Boy

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

Reviewed Wine Poached Peaches with Ice Cream

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

SO yummy! I just wanted to bottle the poaching syrup up and pour it on ice cream anytime. The only problem is that the syrup and peaches will be hot, and your ice cream will melt quickly. Don't worry, you'll finish it before it all melts ;)"

Reviewed Pepper Crusted Tenderloin with Mushroom Cream and Roast Asparagus

Apr 13, 2011 in Food Network Community Toolbox on FoodNetwork.com

I've tried out a few steak recipes, but this one takes the cake! The brandy and mushrooms give the steak a carmelized, mellow flavor, while the pepper gives it a great kick. Add that to some crisp asparagus and it's a perfect date-night meal! "
