My Activity

Reviewed Tilapia Fish Tacos with Arugula

"These were a lot of work, but a very creative 'fusion' recipe to make at home. I couldn't find creme fraiche at the grocery store, so I mixed a little sour cream and greek yogurt with wasabi paste. It turned out alright as a topping, but I think the mango-avocado salad made this dish. (Too bad I picked a lousy mango!)"

Reviewed Peppermint Bark

"Delicious and super-easy! This is kind of a non-recipe, but.. why not? I love it with semi-sweet chocolate too."

Reviewed Broccoli and Cheese Smashed Potatoes

"I liked the basic idea of mixing mashed potatoes with broccoli, but I found that this had too much milk and was somewhat flavorless. I added smoked gouda, a few tsp. of garlic powder, and a little more butter and strained the potatoes to remove some of the milk. "

Reviewed Chicken Empanadas

"These are by no means authentic empanadas, but they're very yummy. My filling tends to sink to the bottom a bit. I've also made these without the chicken (just the cream cheese & pepper stuffing) and it comes out yummy!"

Reviewed Grilled Honey Glazed Chicken with Green Pea and Mint Sauce

"My hubby and I made this for an anniversary getaway - we had a grill and some tongs, so I went ahead and marinated the chicken ahead of time, put the pea-mint sauce in a tupperware, and then we just grilled it up! This would be fun for a beach bbq away from home. I loved the flavors in the chicken and I thought it'd be fine on its own, but my hubby loved the sauce."

Reviewed Coconut Shrimp with Orange Marmalade

"This coco shrimp is delectable! The dipping sauce is a must. (I sub apricot jam, because that's what I usually have on-hand.)"
