Definitely have to be a butternut squash fan to like this one, which we are. Just had to about double the parmesan to give it a little more cheesy flavor, but maybe that's because I used more butternut than it called for. It turned out pretty good!

I make this pretty often, especially during the colder months, for my husband and myself. I doubled on the goat cheese and the onions to make it creamier and more flavorful. The squash is pretty filling, so it lasts us a few days.

Finally got my hands on some pumpkin puree cans, so I decided I'd give this recipe a shot. It was simple and turned out better than I expected. Loved the fact that it's got a lot of pumpkin flavor. Only thing I'd watch out for is the baking time and refrigeration time. I'd add about half an hour on to the baking time and leave the cake in the frid"
