These were so good!!! However i did make some changes. Since people said it was to sweet i lowered the sugar to 1/2. I also added the zest of a lemon to the crust and the juice of a lemon to the filling. That also made it cut down on the sweetness. The lemon flavor adds a fantastic flavor to it. I wouldn't quite consider them healthy though. Thanks...

SOOO GOOD!!!!!!!!! I make a batch of them every sunday for a go-to breakfast in the morning with a tall glass of milk. I don't frost them, there is no need too. If you double it and make a cake with it make sure to put the carrots in a paper towel and squeez it or else it will become watery in the middle."
