This was really good! I had leftover mediterranean chicken that I had baked in lemon and olive oil and added that to the soup. I was not sure about the tarragon but it was unbelievably good. Paradise Bakery sells this soup but it is not near a good. Great easy recipe!

Loved this! Light and fresh. Am always looking for a different way to use tomatoes. We loved the garlic. I made sure it was minced--not chopped just like the shallot. Made Ina Garten's (Barefoot Contessa) garlic bread (really different and yummy) and BBQ chicken. It was a great and easy dinner. This will be a staple in our house.

SO glad I read the comments first! This recipe has two MAJOR errors from the original recipe on the Barefoot Contessa's website!! Use only 1 Tablespoon salt and 1 1/3 cups breadcrumbs. I wanted to add a couple of tips to my review. I use the old fashioned paper clips to keep my parchment paper sealed. Also, I hate cleaning leeks and I use them quite a bit. Trader Joe's sells frozen leeks. I keep a bag in my freezer all the time and just take out how much I need and let it defrost. For this recipe, they worked just fine."
