"I have made profiteroles from recipes using all milk and ones using half milk and half water. I was apprehensive about this one using all water thinking they would not have enough flavor. Since I have had so much success with Anne's other recipes I decided to give it a try. They have just as much flavor and are far lighter than ones made with milk. I also think they rose higher.

"This recipe is so easy and simple and has so few ingredients, it's hard to believe it has so much flavor! I really wasn't expecting it to be as good as it was. The best part is sopping the bread in the olive oil. I used a bag of large frozen shrimp, cooked it and served it in a small cast iron skillet. We had it for a main course along with sauteed spinach and crusty bread, wow!

"Amazing recipe! I think it's better than Giada's "mascarpone cheesecake with almond crust" (which we also loved). The crust is outstanding. The orange zest and almond extract are just delicious!
