Reviewed Rice Pilaf with Arugula

I did it with spinach instead of arugula because that's what I had. It was very nice. A perfect complimentary side dish to something bolder. "

Reviewed BBQ Chicken Toes

The BBQ sauce is awesome! Kids and adults alike were in love. I didn't have our grill out just yet so I half-way cooked the chicken in glass pans in the oven then covered them with sauce for the remaining 25 minutes. Talk about tender and juicy and full of flavor. The only complaint was that there weren't enough!"

Reviewed Coconut MacNut Shrimp with Guava Sweet and Sour Sauce

Mar 2, 2011 in Food Network Community Toolbox on FoodNetwork.com

Tremendously tasty! I am gluten intolerant so I used sorghum flour instead of regular - no difference as I could tell. I also substituted the frozen guava concentrate (which I couldn't find!!!) for 3/4 jar of Trader Joe's Mango Chutney and WOW was my family happy with that sauce! It will be a family favorite for years to come. "

I served it over basmati rice which soaked up all the extra sauce and honeyed carrots. The roasted asparagus that everyone else has mentioned would have been a...

Reviewed Grilled Chicken with Spinach and Pine Nut Pesto

Feb 9, 2011 in Food Network Community Toolbox on FoodNetwork.com

This was really quick and easy. I can't afford the pine nuts so I used walnuts instead and it still tasted wonderful. I made 5 chicken breasts instead of two and doubled the pesto recipe - the proportions worked out beautifully. Pile that pesto on high folks!!
