Reviewed Creamy Lemon-Pepper Orzo with Grilled Chicken

Delicious - can't believe it was so low-cal, yet so creamy! Not sure why you'd make this if you don't like goat cheese, though. I used chicken breast, butterflied, then marinated in 1 tbsp. of yogurt, 1 tsp garlic olive oil, 1 tbsp. mixed herbs (I used tarragon & parsley), some of the lemon zest. Otherwise, followed the recipe.

I'm not a meatloaf fan, but I tried this because I thought it would be a good way to get some veggies to my kids. Unfortunately, they didn't like it at all. My husband and I thought it was just ok. I won't be making it again - way too labor intensive for the lukewarm reviews I received.""

We had this for dinner tonight and it was wonderful! The tomatoes were deliciously caramelized and worked amazingly with the salmon and bok choy. This was a really tasty and light dish - I'll definitely be making this again!"
