This recipe is FANTASTIC! I make it once or twice a week, and never grow tired of it! I only make a few slight changes: I keep the olive oil to 2 Tablespoons, but increase the honey to 3 Tablespoons. I also lightly dust with cinnamon before putting them in the oven. So Good! "

I was trying to find a great recipe for mock fried chicken for a diabetic family member. I went as far as to try to trick him into thinking this was the "real deal". He took ONE bite and said, "All I can taste is cornflakes!" So he took off the breading and just ate the chicken thighs. I won't be making this recipe again!"

These are so fantastic! The first time I made these meatballs they fell apart too easily. The second time I made these, I grated the onion in the large mixing bowl first, then squeezed most of the excess onion liquid out.
