"My first time making Mahi-Mahi, I substituted the vanilla bean with vanilla extract and the ginger root with ground ginger. Other than that, I used everything exactly how the recipe called for. I found that the sauce was way too peppery and you couldn't really taste the mango. Overall it was a tasty dish."
