I love this salad and actually crave it! Who craves a salad? Try this and you will see why! I've used regular eggplant instead of Japanese, I've also left out the arugula and think it's fine with or without it. I make this as often as possible.

Loved this! I used bacon instead of salami because I had it on hand. I also added some basil to the herb mixture, but other than that I followed it exactly. Mine was perfectly medium after baking for 10 minutes. I give it 4 stars because it didn't really keep its shape when I cut it, but it was delicious!

I wish I would've read these reviews before making this because everyone is right....there is way too much dressing!! You could halve the recipe and it would still be too much. This was delicious! I ran out of propane so I made these in my oven. Preheated oven to 425. I precooked the planks for 15 minutes before putting the salmon on them. I cooked the salmon for 14 minutes and it came out perfectly. The flavor was so good. I can't wait to try this on the grill."
