Reviewed Chicken Parmesan

"This was very good, a little involved because you have to use so many dishes during the prep, but worth it in the end. I did tenderize the chicken and I think it helped keep the meat soft and moist once cooked. I also used diced tomatoes for the sauce and pureed it a little with a hand held mixer prior to adding the basil... I find my kids complain less about tomatoes if they are are not in any size chunck! I also got sliced mozerella from the deli counter (thin) - it looked nicer once melted and I think I was able to control the amount much better. I would make it again for sure
