"Fantastic! I am trying to find new ways to work a variety of veggies into my diet - I never eat cabbage, so this seemed like a nice opportunity to squeeze some in. Came out great! I did use chicken stock (not vegetable and frozen spinach to save a little $$. Used diced tomatoes with green chilies as we had it on hand. Absolutely will make this again; nice, deep flavor, super healthy and filling. Meat-eater fiance loved it too."
