Absolutely delicious! I am not a fan of gorgonzola, so I substituted with grated gruyere. Super, super tasty. I ended up picking out a white sweet potato, so that all the ingredients were white. Love the pairing with dried tarragon. Just wish it wasn't so high in fat (heavy cream & cheese)! Oh well, its a dish to make sparingly or for special occasions....
