Reviewed Bacon Cups with Sweet Potato Hash

"I'm on the South Beach Diet and was looking for a way to have sweet potatoes other than the typical baking, mashing, or making into medallions. I saw Brian make these on his show and thought I could easily adapt them by using olive oil in place of bacon grease, turkey bacon in place of bacon, and eliminating the pancetta all-together. Lemme tell ya, this was a HIT at my house. It's an absolute perfect mixture of sweet and smoky w/ a little bit of spicy thrown in. We had it as a side dish w/ steaks. Phenomenal!!!"

Reviewed Aunt Glynn's Chewy Cake

"I made this tonight w/ several modifications to make it South Beach Diet friendly. I used whole wheat flour, of course, and instead of brown sugar I used 2 cups of Splenda and 3 tablespoons of sugar-free maple syrup. I used 1/2 cup Smart Balance instead of butter and unsweetened coconut flakes. I also used almonds in place of pecans (only b/c I like almonds better). It turned out wonderful!!! This is my first try at converting a recipe myself instead of relying on someone else's conversions and I have to say I'm pleased w/ how it turned out.
