"Perfect once again this year! Two years running with this fantastic recipe.

We cooked a 12lb fresh butterball turkey
Convection roast - Viking oven
Cooking time was approx. 10 minutes per lb.
Reduced initial 30 minutes at 500 to 20 minutes, because of smaller sized bird and convection heat
Removed at 161 and let rest until turkey reached between"
