For those who asked and never got an answer, I steamed my wings in my regular two tiered steamer, let them dry and cool in the frig as stated in the recipe then bagged them up (with the paper towels for good measure) for cooking the next day. Everything worked fine.

Now I usually like my wings fried in a flour coating because butter...

Making it ahead should not be a problem. The lemon juice is mixed into the topping which because of the butter and other ingredients, only lays on top of the shrimp. Not much chance of it cooking the shrimp.
