Reviewed Hot Chicken Salad

"Quintessential Paula! This recipe turned out delicious the first time I made it. I was snowed in this week with nothing but poached chicken and some odd pantry sundries, I decided to try to make this again and substitute a couple of the missing items. Turned out fantastic! Substituted quartered black olives and a half cup of chopped canned artichoke hearts for the celery, then added a bit of celery salt for flavor. No chips... dang. Anyhow, while I really missed the fresh celery and crispy chip crust, the recipe still works without it and you still get that satisfying crunch from the slivered almonds. I think this recipe can be successfully tweaked in a pinch as long as you keep the chicken, lemon juice, mayo, nuts, and cheese.
