This was amazing - so full of flavor - and I really did need to modify a thing. Instead of Smithfield's ham, I just got a pound of Black Forest Ham from our neighborhood deli. Very tasty and easy to make. The jalapeno gives a very nice little kick without being overpowering. I am not much for salting foods, but I do add a pinch just after adding the cream. Amazing. I was going to add chicken, but decided it wasn't fresh enough so went completely without any meat, but the flavor with just the egg and the rich sauces is so delicious! I did add some freshly grated ginger as i was sauteeing the green onions, and it was a perfect complement."

All three drinks were a home run. Forgot how easy agua fresca is to make... and the horchata's to die for! But there were some errors in the horchata recipe:
1 - it doesn't mention when to put in the sugar. I looked at a few other recipes and it said to mix in after straining, which is what I did and it came out fine.

These are easily better than 95% of the foodie brunch restaurants' home fries. Couldn't believe how easy / hassle free they are. I was out of the Montreal steak seasoning and used Emeril's Essence instead. I wasn't sure if it would do, but they came out DELICIOUS with a traditional, tasty home fries flavor. I have made them without bell peppers...
