Reviewed Thai-Style Halibut with Coconut-Curry Broth

"If you like "spicy," this is the recipe for you! I've given this out to many people who all have the same reaction as I do....this is a great recipe that is also versatile! I love the flavor of the broth and have used it over noodles as well as rice. I have made this recipe with all types of mild fish and shellfish including roughy, tilapia, flounder, scrod, shrimp, and scallops...and they were all wonderful!! (I wouldn't try a heavy oily fish like salmon as I don't think the flavors would meld well! Another plus is that it is a "one-pot/pan" meal... Enjoy!

Reviewed Maple-Mustard Chicken Thighs

"I generally love Ellie's recipes but this one is outstanding! I have put this as a regular dish in my monthly meals... The flavor is wonderful...not too spicy and not too sweet! In addition, I love the fact that the chicken actually gets a wonderful "crisp" finish without having any skin to crisp... so this is a great trick that saves fat and calories. In my hands, I also get a bit of a sauce that develops in the roasting pan which is an extra plus. Finally, the best reason is that it is easy to prepare and you can make a big batch to warm later on.... A-Plus in my book!
