Personal experience tells me that you MUST sear the beef. The people who said it was too salty didn't read the recipe carefully. You aren't meant to use ALL of the house seasoning, just enough to coat the meat on both sides. There was a lot of juice so if you don't want to have a lot of juice cut it down.
