I made this with 1/2 zucchini and 1/2 yellow summer squash. I cut the salt and pepper in half and added in about 1/2 tsp fresh thyme leaves. I wish I had read the reviews first because I think salting the zucchini first would have been a good idea - I'll do that next time. I used Swiss Cheese and Italian dried bread crumbs. Disappointed in this one. I brought this to Easter dinner at my cousins and it was all eaten. That said, I was looking for a "side dish" and this was more of a bread. You modified it by using the wrong apples, you don't like some of the ingredients and then you give it 3 stars - why did you even make it at all? Duh!
