"The glaze is great. A much better way to cook it though is to grill (or grill-pan the "show" side of the fish with just a little salt and pepper, flip it over and cook the skin side thoroughly. Then apply the glaze and throw it under the broiler for a while. The meat is then correct texturally and the salmon taste is more prominent. "
