Have made this several times, what I've learned is to put in lime juice into a measuring cup first then add broth to make it 4 cups (for 2 cups of rice) so it won't get too watery. I absolutely love this as I made this last nite for a friend of mine. She loved it and got a copy of your recipe. The flavor from lime juice was perfect, not too strong, it was just perfect, I used 2 limes and zest. It was a bit watery after 20 min as I put 3 cups of water for 1 1/2 cup of rice, next time I will put about 1/4 - 1/2 cup less broth "
