A very easy and tasty dish. I've made it several times on those nights where we didn't want anything heavy. It's also one of those recipes that is made from items I almost always have on hand. It has rescued me more than once. The whole family enjoys it.

I will never again purchase chili seasoning mix. This is a perfect recipe for my family because there's not too much heat. I use more tomatoes and change up the beans, but the balance of seasonings is perfect.

I made this for a Bolly Bash party I attended this weekend, where every guest brings a Indian/Middle Eastern inspired dish. I was glad I waited to add the dressing after I arrived at the party. It 'wilted' the zucchini and made beautifully delicate 'ribbons', as the name of the recipe indicated. The roasted peanuts pushed it right over the top! So"
