I soaked my peas overnight and they came out just fine. Also, take some of the peas out after cooking, mash them and stir them back in. Helps to thicken. I like my peas and ham a bit on the soupier side. Makes for great dipping with good heavy bread.

I've been looking for a really great black-eyed peas and ham recipe. This Is It! Made it with smoked ham shanks which are meatier, albeit a bit saltier. This will be my go-to recipe.

This is not what you think of as a typical fajita recipe. Notice that in the ingredients, it calls for tortillas, but in the directions it says its to be served with rice or potatoes. Trust me, unless you boil it way, way down or thicken the sauce, there is no way this will go onto a tortilla. Much, much to runny. As far as taste goes, it was okay"
