Tasty? Yes! Used Mexican Chorizo and shredded Monterey Jack cheese. Just be certain to DRAIN your chorizo and mushrooms before adding cheese. Mine was a little greasy but... still great flavor."

This turned out great, but honestly more like a decadent dessert than the side dish with pork chops that I was aiming for. I think it's probably b/c I used canned sweet potatoes since that was all I had on-hand. But, if you're in the same boat, don't be afraid to make this...just be prepared for it being super-sweet! Loved it! Didn't use any ginger (not a huge fan) and only had granny smith apples and it still turned out sweet and delicious. I cooked the chops (in both phases) longer than recipe called for. Also, I like to cover while they are cooking...I think it makes them more tender. Will definitely make again."

OH my goodness! These were PACKED with unbelievable, rich FLAVOR. Really makes you question if it's really a vegetable you're eating! I think next time I'll possibly pick out at least half of the little rendered bacon pieces before letting it simmer for 40 minutes (maybe I was supposed to do that??) so I end up with mostly just beans and some mushrooms....

Delicious and I'm not typically a huge fan of Irish Soda Bread. I will say, although tasty, it was NOT pretty! I guess I have no idea how to evenly knead the dough. Excellent! Better than I could ever find in the best Deli in Dallas! I made the mistake of rounding my teasponoon of kosher salt just a tiny bit and it was a bit too salty for me, but not inedible. So, next time, I'll stick to the exact one teaspoon or perhaps a little less. So delicious. Will make this often!"
