Reviewed Chorizo and Shrimp Quesadillas with Smoky Guacamole
"General consensus was a resounding "YUM!!" I didn't make the guac 'cause I'm the only one who would eat it, but a little sour cream worked just as well."
Reviewed Chicken Tamale Pie
"Not a hit. Filling was bland and cornbread came out as a thin, mushy crust. Maybe I should have used a spicier salsa. Or maybe it was an error on my part. Not sure I'll bother to try it again."
Reviewed Bucatini All'Amatriciana with Spicy Smoked Mozzarella Meatballs
"Before she even finished chewing the first bite, my daughter declared this a keeper. The rest of the meal was abnormally quiet as everyone focused all energies on mass consumption of this dish. When the final forkfull disappeared, and the family glanced forlornly at the empty dish, the only question was, "When will you make this again?"
I did us"
Reviewed Scuderi Kids' Fast, Fake-Baked Ziti
"This was immediately proclaimed "A KEEPER"! The only complaint was that it has no meat, so next time I may brown some italian sausage crumbles to add in. Served with a regular green salad as artichokes are not a favorite."
Reviewed Chicken Saltimbocca
"Very flavorful. I used some fresh mozzarella, thinly sliced, with just a bit of parm. Also added the garlic to the spinach as previously suggested, and used it sparingly. Also added a bit of garlic powder to the chicken. The family was impressed!"
Reviewed Company Pot Roast
"Perfect! My husband HATES pot roast, but raved about this one. Followed the recipe exactly (yes, you must use kosher salt!) Except added 3 small bay leaves ( 1 of which is still MIA), 1 tablespoon worcestershire, and used a cabernet sauvignon. There's probably enough sauce for two meals, so maybe the braised chops and enough to pour over egg n"
Reviewed Sweet and Spiced Pecans
"I only wish I'd made a double batch! I consider this a great base recipe that people can adjust to taste. For me, the salt was fine, and even though I cut the pepper to 1.25 tsp, I may cut back to a shy tsp next time and may increase sugar and allspice -- or try a bit of cinnamon. Looking forward to experimenting. Only "complaint" is they ARE"
Reviewed Coq au Vin
"Wonderful! I used cabernet sauvignon, but only had room in the pot for 1 bottle. The only complaint from the family was that they couldn't eat it the first day since I was making the house smell so good. Chicken fell right off the bone so I served it more like a stew over mashed potatoes. Time consuming, but not difficult at all."
