@amurrayrubin- Did you reduce the amounts of the brine due to the smaller turkey breast or did you use the same amount in Alton's recipe?

I made this in 2007 for me and my roommates. It was the first time I had ever attempted to cook turkey and I was nervous about making it. saw the show and I decided to try it. This was the best turkey I've ever tasted. It was phenomenal! This year I'm making it again and I was wondering if I should use a brine or not?

I tried tis recipe las year for Thanksgiving and it was a hit! I did tweak it a bit and added rosemary and some chicken brothe to the cream mixture. I also used mexican style cheese along with the cheddar and I skipped the clove. It was great and I will be making it this year too!
