Huge Party Hit!!!!! I used a little less Red Onion because I'm personally not a fan. And I found it required more like 5 tbs of apple cinder Vinegar. I just kept tasting the dressing until I got it right. The bacon and the Pecans make it for sure! I'll be doing it again. My group ate the whole bowl and wanted more!"

I followed the suggestions and tried these three different ways. One with the toasted Almond inside that was a big hit. One with a drizzle of balsamic vinegar (the good stuff) that was my favorite. And one broiled in the oven on Lo for about 6 minutes. That one was also good. Very versatile Combination!"

These were good but not great. The Polenta really lacks flavor as other have said. I am going to try it again with Sun Dried Tomato Polenta cooked with Chicken stock to see if I can boost the flavor a little bit. Polenta has a good texture and these are super simple to make and eat. "

Unexpectedly DELICIOUS and Simple. I thought these would be time consuming carving out the Tomatoes but nope it's fast and easy. I used left over Roasted chicken and it didn't change the flavor at all. Great for left over chicken. The cinnamon is the key in this recipe, go easy on it but it adds a fantastic flavor to the apple and chicken. "

WOW! These are Yummy! Reminds me of my favorite Sushi Roll. I followed the suggestions and added more Smoked Salmon than they called for. I also substituted Chives for Shallots as I don't particularly like Shallots. Excellent recipe. If you don't want to be super fancy you can spoon the mix into the cucumbers. Still looks nice and takes less time."

My boyfriend really loved this. I used Cherry tomatoes because they hold up better when you don't eat it right away. Great picnic dish, eat it with chips so you don't have to bother with forks! YUM!!! I went a little easier on the cumin as it is a strong flavor and can overpower the more subtle notes of the avocado and paprika. "

Excellent Picnic and travel dish!!! I steamed the broccoli just a bit and then shocked it in cold water and allowed to to comepletely cool before tossing it with the rest of the ingredients. This dish hits all the notes, sweet, savory, cool, with a little bacon and citrus kick. YUMMY!!!!!!"
