Someone said that it's all about the blue cheese you use and I'm posting to say that I agree. I used poor quality blue cheese that I didn't like, powdered buttermilk with a spoon of yogurt (because I didn't have buttermilk in the fridge) and the dressing tasted just like my nasty blue cheese. This is delicious. My kids like this better than the corn syrup version in the local grocery stores. The vanilla bean adds a bold and nuanced flavor that is better than good quality vanilla extract. Delicious recipe.
I added a bruised clove of garlic, steeped in the milk and removed before adding the cornmeal. I did not have fine cornmeal, just regular. The dough was not firm enough to cut (perhaps because of not using fine cornmeal as directed?), so I placed dollops in a pie plate, brushed with butter and baked at 450 until browned....
