"Very easy recipe to make. I omitted the cheese and the rice was good on its on. It makes a huge amount of rice - I will make half the amount next time. I made ahead and rewarmed before serving. Topping with fresh cilantro just before serving really brightens the flavor."

Reviewed Slow Cooker Chocolate Candy

"Followed the recipe exactly as writen and candy turned out great. Used an old RIVAL crockpot with heavy duty pot. Cooked 3 hours on low without stirring. Candy is very good - will definitely make again. I got about 75 pieces of candy."

The next day I cooked the eggplant and assembled the dish which took another hour. It made a large dish - about a 10 x 13 dish full. 3 full layers of eggplant. I only had about a cup of sauce left.
The third day I cooked the dish which cooked for about 45 minutes. A huge hit and served 8 large servings + had leftovers.
BTW - I skipped the salting eggplant step and the eggplant was delicious.
Very good dish!
